GINGERBREAD
DOUGH
- 7,5 kg flour (bread flour)
- 4,5 kg honey (solid honey)
- 1,5 kg sugar
- 15 eggs
- 75 g cinnamon
- 85 g baking powder ‘alkali’
- 600 g water
- 300 g baking powder (BIC)
ROYAL ICE
- 175 g fresh egg white
- 1 kg powdered sugar/Icing suger
- little vinegar
LET’S MAKE THE DOUGH
- Warm up the honey until it’s liquid
- Put the sugar in a mixing bowl
- Add the honey to the bowl
- Add the eggs, flour en mix it all together
- Mix the water & the alkali together & pour it in the bowl
- After that you mix the baking powder with some water en pour it also in the bowl
- The dough is ready, put it in the fridge well covered with plastic foil & let it stiffen
NEXT STEP
- Sprinkle some flour on your table
- Roll out the dough with a thickness of 3 cm
- Now you can cut out the shapes of the cookies
- Then put them on the baking tray
- Cover them with egg yolk & milk (100 g – 100 g)
BAKING & DECORATING
- Preheat the oven to 200°C
- Bake at 180°C for like 13-14 minutes
- Let them cool down
- Now you can decorate them like you want
